Red Cabbage Ferment

1 red cabbage, shredded

1 -2 red onions, sliced

2-3 chillies, chopped

2 garlic cloves, chopped

2 tablespoons crushed ginger

2 tablespoons good quality course salt

1 tablespoon of whey (optional)

 

1) Put aside one whole cabbage leaf. Mix the remaining shredded cabbage with the other ingredients in a large metal bowl or mortar. Pound evenly with a pestle until the cabbage breaks down and juice is extracted.

2) Pack tightly into a wide neck jar by pounding gently.

3) Repeat this process until the jar is 2 cm from the top. Add water if you do not have enough liquid to cover the cabbage.

4) Use your saved cabbage leaf to cover the top and keep the water level above that.

5) Secure the jar with a tight lid and sit on the shelf for 2-3 days, depending on temperature. In colder climates, ferments can take longer. When the cabbage turns from purple to pink refrigerate. This pretty and tasty ferment if you added whey will hold for 3 months if there is no cross-contamination.

 

Always use a clean implement to serve ferment.

All Purpose Spray Cleaner

All Purpose Spray Cleaner; Lemon cleaner:

Place the rind of several lemons in a jar, top up with white vinegar and store for several weeks.

Strain and pour into a spray bottle with 60% water and a dash of dishwashing liquid for the ultimate all-purpose, non-toxic cleaner!

Add several drops of essential oil,

clove, tea tree or lavender.

Use with bicarbonate of soda for stubborn stains.
